  • The Japanese Meat Grading Association (JMGA) inspects each cut between the sixth and seventh rib to determine two grades: Yield Grade – indicates how much usable meat is present relative to the entire animal (Grades A–C). The highest grade, A5 Wagyu, reflects the best possible yield (A) and the highest quality rating (5) across all factors.
